Steamed glutinous rice with spiced black eye peas
While it's easy to grab an easy breakfast on the go, it's not difficult to cook a simple yet nourishing breakfast, especially when we have more time to stay at home now. Today we had black bean stock infused steamed glutinous rice with spiced black eye peas as the side. Black eye peas can be prepared in advance, the leftover can be eaten as a dish for a quick meal as well
Recipe
2 cups glutinous rice
Black bean stock (replace with water or black eye pea stock or chicken stock if desired)
1 tbsp coconut oil for flavour (optional)
Salt to taste
1 cup black eye pea
3 shallots
2 tsp Five spice powder
2 tsp pepper (I add more for an added spiciness)
Salt to taste
Method
Wash and soak glutinous rice overnight.
Pour glutinous rice onto a tray. Mix a small amount of stock with salt (and coconut oil), and pour into the rice. Add just enough stock to be the same level as the rice. Steam for 30-40 minutes till soft
To prepare black eye peas (can be made in advance)
Wash and soak peas overnight, or at least 8 hours. Cook in water for 30 minutes, and drain. Do not overcook.
Slice shallots thinly. Heat oil and brown the shallots in medium heat. Add in the cooked black eye peas, five spice powder, pepper and salt. Stir fry for another 10 minutes using medium heat.
Serve hot with rice.
