Red bean and black glutinous rice paste
Let's make it black this Friday! Give your jaw a break without sacrificing your wholegrain consumption with this hearty, warming and nutritious breakfast that is easy on the digestion and preparation - red bean and black glutinous rice paste sweetened with dates, topped with a sprinkle of ground black sesame. This dish is rich in protein and fibre, which promotes satiety and regulates blood sugar for better mental performance. Best for a busy day before the start of the weekend :)
Recipe (serve 4)
200g Red beans
100g Black glutinous rice
8 medjool dates, remove stones
4 tablespoons roasted black sesame seeds
1.0 L water
4 pandan leaves, knotted
Method
Soak red bean and black glutinous rice overnight.
Roast black sesame stove on medium low heat, till fragrant, about 5 minutes. Grind black roasted sesame seeds and keep for later use.
Boil 800ml water in a pot with pandan leaves. Remove leaves after 15 minutes
Blend soaked beans, black glutinous rice and pitted dates with 200ml water till smooth.
Pour the blended mixture into the pot of boiling water and stir constantly. Reduce heat to low and simmer for 30 minutes.
Serve warm with a tablespoon of ground black sesame seeds.
To prepare the night before, Using a rice cooker, boil water and follow the steps as above. After addition of blended mixture, switch cooker to keep warm mode overnight. Wake up to a warm hearty breakfast and enjoy!
